USDA Agricultural Research Service (USDA-ARS) promotes the health of Americans and world citizens by ensuring a food supply that is safe, affordable, and contains ample levels of nutritional and health-beneficial components. This mission is a reason the USDA-ARS is part of the NCRC. Working with NC State and UNC Chapel Hill faculty, USDA-ARS postdoctoral associates are focused on understanding the potential role of blueberry consumption on the maintenance of cognitive function in the elderly. Blueberries are rich sources of anthocyanins and other polyphenolic compounds that are known to have antioxidant activity. Blueberry consumption has been shown in animal models to lower blood glucose levels, reduce oxidative stress in the central nervous system (CNS), and improve cognitive function. Studies also have demonstrated that inflammation is elevated in the CNS during normal aging and in age-related neurodegenerative diseases. Blueberry polyphenolics may play a role in reducing inflammation and age-related dementia. Already, studies are showing that the measurements of compounds from bleuberries illustrate the benefits of eating minimally processed whole foods and have revealed that handling practices can lead to reductions in anthocyanin, the blue pigment in blueberries that contains healthy flavonoids.
